Description

Versatile Kokonati organic coconut sugar is made from the sap tapped from the coconut flower blossoms. The sap is slowly evaporated and crystallized into coconut sugar. Coconut sugar has a subtle sweetness that enhances the flavor of cooking and baking without overpowering it.

Uses Use in refined-sugar-free baking and as a natural sugar alternative to heavily refined white sugars. Can replace regular sugar 1: 1. To use as a healthier alternative to white icing sugar, it can be ground further by running in a dry grinder. Coconut sugar when finely powdered is lighter.

Flavor Aroma is neutral and taste is pleasantly sweet. Although every batch of this naturally extracted flower sap varies in color, a lightly caramelized golden to medium brown is the usual color of crystallized coconut sugar.

Storage Keep airtight in the pantry, away from sunlight and damp. Use a dry spoon to scoop out. Use within 3-4 months from opening. With a best before of two years from the manufacture date, coconut sugar remains safe to use for even longer periods as long as it is stored with minimal exposure to light, air, and moisture. This is why Kokonati coconut sugar is packed at the origin, in the very plantations the coconut sap is harvested from, to seal the freshness and reduce exposure from day 1.

Benefits Coconut sugar contains sixteen types of amino acids, vitamins, and minerals because it is made for coconut sap, harvested from coconut trees that grow in rich, volcanic mineral-rich soils. Coconut sugar has been tested to show a low Glycaemic Index (GI) level. Low GI sugars when consumed are metabolized slowly which helps regulate energy levels for daily activity without causing the “high” and “lows”’ that refined sugars and artificial sweeteners can cause. The only ingredient that goes into making coconut sugar, the coconut sap (extracted from the coconut flower) also has a nutritional content rich in Potassium, Magnesium, Zinc, and Iron. It is also a natural source of vitamins B1, B2, B3, B6, and C. As it is a natural product rich in minerals and enzymes it aids the slow absorption of sugar to the bloodstream.

Coconut sap is harvested by traditional methods handed down generations of toddy-tapping families. It is an intricate art; harvesting and extracting coconut sap and crystallizing it into sugar. This traditional production allows village populations to utilize their age-old knowledge and expertise to survive in this modernized and mechanized world of manufacture by producing this 100% natural unrefined product. The toddy tapper families’ collect the natural sap every 12 hours and simmer it gently to reduce it. The resulting thick syrup is sent to the local mill where it is oven-dried in flat trays. The resulting sugar crystals are sieved, packaged and sealed for freshness. Backed by generations of coconut expertise, and certified with ISO and Organic standards, the mill plays a vital role in the employment, welfare and wellbeing of the village community. The children of our workforce are provided with school books and stationery for the entire school year. The mill also organizes religious and cultural events to inculcate a sense of belonging to a bigger cause, bringing a sense of pride and community to the villagers who are using age-old knowledge, treading lightly, and making a living for their families, sustainably.

Packaging and recycling 500g and 1kg bag-in-box. Dispose of soft plastic bags by taking them to your local supermarket and putting them into their green recycling collection bins. The card box can be disposed of in the curbside recycling bins.

Beautiful sugar

I used this when stewing summer fruit. I am sure this sugar brings out extra fruity flavour without adding sickly sweetness. Perfect accompaniment.

Kokonati Coconut Sugar has a rich flavour and smooth, soft texture

Last year I bought some cheap raw cane sugar after running out of coconut sugar.
It lasted way too long due to the fact that it was nowhere near as good as the beautiful dark Kokonati organic coconut sugar.
